Spinach-Basil Pesto

This is a new take on an old classic.

It is wonderful on pizza, pasta, sandwiches...or, for a delicious appetizer, it can be used as a dip for veggies or atop crustini.

Serves: 6
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

  • 1/4 cup toasted pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1/4-1/2 cup olive oil
  • 1/4 cup fresh spinach
  • 4 cups washed basil leaves, stems removed
  • 1-2 garlic cloves to taste
  • Salt and pepper to taste
  1. Toast pine nuts in a skillet for 5 to 10 minutes over low-med heat, stirring; they burn easily, so watch them!
  2. Add pine nuts and cheese to a food processor or blender and begin blending.
  3. As ingredients are blending, slowly drizzle in olive oil to desired consistency.
  4. Add the spinach, basil, garlic, salt, and pepper and blend until all ingredients are incorporated and the pesto is uniform and creamy.
