Lunch Time Tuna Sandwich

A quick, last minute, healthy lunch after training all morning.

This sandwich pairs well with large whole kosher dill pickles and chips, and either your favorite soup (may we suggest Eddie's Spicy Roasted Tomato Soup) or a salad - either a mixed fruit or a caprese (fresh basil leaves, sliced tomatoes and buffalo mozzarella) would be delicious.

Yields: 6-7 sandwiches
Prep Time: ~15 minutes
Mix Time: ~2-3 minutes
Total Time: 20 minutes or less
Lunch Time Tuna Sandwich

Sandwich:

  • 5 12-oz cans solid white Albacore tuna (packed in water)
  • 1 1/2 cups mayonnaise
  • 1/2 cup mustard (yellow, Dijon or stone ground, as preferred)
  • 3/4 cup sweet pickle relish
  • 1 tablespoon ground black pepper (to taste)
  • 1 teaspoon sea salt (to taste)
  • 1 handful cilantro, washed and chopped
  • 2 carrots, finely diced
  • 1 lime, juiced

  • 2 loaves multi-grain bread

Side platter of optional favorites:

  • Lettuce leaves, washed (iceberg and Romaine both work well)
  • Fresh tomatoes, sliced
  • Red onion, thinly sliced
  • Avocado, sliced
  • Provolone cheese, sliced

Optional sides:

  • Chips
  • Kosher dill pickles, whole or sliced into wedges
  • Soup
  • Fresh fruit
  1. Open and drain tuna cans.
  2. Place tuna into large mixing bowl and, using a fork or knife, break up into small pieces.
  3. In a separate small-medium bowl, using a whisk, mix mayonnaise, mustard and relish until an even consistency. Then mix in salt and pepper to taste, and add cilantro, carrots and lime juice & mix well.
  4. Add mayonnaise mixture to broken up tuna & stir to incorporate well.
  5. Between your slices of bread, add your side platter favorites and top off with tuna mixture.
  6. Garnish with sides and enjoy!
