Ghosthouse Greek Salad

A fast & tasty salad that is packed with flavor...healthy for you, too!

Pairs well with warmed flatbread that is drizzled with olive oil & sprinkled with your favorite herbs, Parmesan crisps or garlic toast.

Salad: serves 6
Dressing: yields 2 cups
Prep Time: 15 minutes
Total Time: 20 minutes

Salad:

  • 1 head romaine lettuce
  • 1 bunch of fresh spinach
  • 3 tomatoes, cut into wedges
  • 1 cucumber, sliced
  • 1/4 cup pitted whole kalamata olives
  • 1 roasted red bell pepper, sliced into thin strips
  • 4 ounces crumbled feta cheese
  • 1/2 cup of red seedless grapes, rinsed & halved

Balsamic-Honey Dressing:

  • 2 tablespoon dijon mustard
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons honey
  • 1 teaspoon fresh basil, finely chopped
  • 1 teaspoon fresh oregano, finely chopped
  • 1 teaspoon minced garlic
  • Salt & fresh cracked black pepper to taste

  • 3/4 cup extra virgin olive oil
  • *Optional: 2-3 tablespoons of water (to thin dressing if desired)
  1. Arrange salad items neatly in a large bowl.
  2. In a separate bowl, whisk all ingredients together for the dressing (except olive oil).
  3. Once all ingredients are mixed well, slowly drizzle in olive oil & continue whisking until dressing reaches desired consistency (*if desired, add water to amend consistency).
  4. Dress salad and enjoy!
