This Ahi sandwich is a tasty and healthy alternative that will keep your crew asking for more!
It pairs well with fresh edamame (soybeans), Miso soup, and the fruit juice of your choice (Sake or Kirin are also delicious with this sandwich; off duty for the latter two, please!).
Yields: 4 sandwiches
Prep Time: 30 minutes
Cook Time: 2 minutes
Rest Time: 10 minutes
Total Time: ~40 minutes
Dry rub:
- 2 tablespoons cayenne pepper
- 2 tablespoons paprika
- 2 tablespoons red pepper flakes
- 2 tablespoons garlic salt*
* If you don't have garlic salt, you can substitute with a 1:1 ratio: 1 tablespoon salt to 1 tablespoon garlic powder
Sandwich:
- 2 packages of "Trader Joe's Sashimi Grade Ahi" tuna (each package contains two tuna steaks) (or 1 lb sashimi grade fresh ahi), thoroughly chilled
- 2 barely ripe avocados
- 1/4 cup of jarred minced jalapenos
- 1/2 teaspoon dried Wasabi powder (available at Trader Joe's and in the Asian section of most grocery stores)
- 2 tablespoons soy sauce
- 1/4 cup mayonnaise
- 1/4 cup Parmesan cheese, shredded
- 2 tablespoons jarred minced garlic
- 4 potato bread buns, sliced horizontally**
- 2 tablespoons olive oil
- 1 large red onion
- 1 large tomato
- 1 package of sprouts
** If potato bread is not available, you can substitute with any hardy type of bun
- Put all rub ingredients in a small bowl & mix thoroughly; set aside.
- Season the ahi steaks with the dry rub (it's preferable to chill the steaks well before cooking, as this will ensure that the center does not inadvertently get cooked...unless you want them well done). Place the steaks back into the refrigerator to rest while you finish preparing the dish.
- Preheat oven to Broil.
- Make the Guacamole: peel the avocados, removing the pits, and mash them in a bowl. Mix in the jalapenos, the Wasabi powder, and the soy sauce and mix together well. Set aside.
- Put mayonnaise in a mixing bowl. Add the minced garlic and Parmesan cheese and mix together well. Place a thin coating of the mixture on the inside of each bun (this keeps the dish healthy) and broil spread-side up 1-2 minutes, until golden brown. Remove from oven & set aside.
- Preheat skillet with olive oil over medium-high heat.
- Meanwhile, slice the tomatoes and red onions deli thin, as you don't want the onion to over power the taste of the ahi.
- After all preparation is done, turn up the burner's heat to high. Remove the ahi steaks from the refrigerator and place in the skillet. Sear the steaks for one minute on each side. Remove from heat and cut each steak into two halves.
- Assemble sandwiches: Place each ahi piece on bottom half of bun. Top each with the guacamole, tomatoes, onions, and sprouts and the top bun half.
Most of the ingredients can be bought at Trader Joe's Market (currently in 25 states and growing monthly). We usually buy the Miso soup in a box, as well as the edamame in the fresh produce section (they also sell pre-cooked edamame in the frozen section; thaw in the refrigerator overnight). Both additions compliment these sandwiches well.
If you don't have a Trader Joe's nearby, all of the ingredients should be available from your local grocery store/fish market; if you're going to cook the tuna as recommended, make certain that you buy 'sashimi grade' ahi tuna (which effectively means that it's been deemed safe for raw consumption); look in the Asian section for Wasabi powder and - should you choose to complement the meal with it - the Miso soup.
