Cayenne Pepper Horseradish and Fresh Garlic Prime Rib Rub

An old classic with a new twist!

This prime rib is delicious with Fried Leek Mashed Potatoes and Grilled Baby Carrots with Honey Butter. Yum!

Serves: 6
Prep Time: 15 minutes
Cook Time: 20 minutes/pound, ~1 1/2 hours
Rest Time: 20 minutes
Total Time: 2 hours 5 minutes
  • 2 teaspoons kosher salt
  • 2 teaspoons fresh cracked pepper
  • 1/2 cup olive oil
  • 3 tablespoons cayenne pepper
  • 3 tablespoons fresh minced garlic
  • 3 tablespoons horseradish
  • 1 tablespoon onion powder
  • 1/2 cup Worcestershire sauce
  • 1 tablespoon Tabasco sauce
  • 6 lb prime rib beef roast
  1. Mix together all ingredients except meat in a large bowl.
  2. Place prime rib in same bowl & rub it all over the prime rib; let it soak in for 25 minutes, turning periodically so that it does so evenly.
  3. Meanwhile, preheat the oven to 350° F.
  4. Put the prime rib in a roasting pan and put in oven. Roast for 1 1/2 hours for medium-rare; check for doneness & monitor accordingly. Remember: roasts cook for ~20 minutes per pound.
  5. After cooking, pull out of oven and let it sit for 20 minutes before slicing to allow the juices to soak into the meat.
